- In the same pot, combine milk, butter, white parts of scallions, nutmeg, and garlic powder. Bring to a boil, then fold in the chopped kale. Cook for 2 minutes.
- Add half of the cooked potatoes to the pot and gently mash them. Remove from heat and let it cool for about 10 minutes.
- Incorporate the remaining ingredients into the pot, including the mayonnaise and sherry vinegar. Season to taste with salt and pepper.
- Transfer the colcannon to a serving bowl. Garnish with fresh dill and the sliced green parts of scallions.
