  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk together eggs, milk or cream, salt, and pepper until well combined. Set aside.
  3. Heat olive oil in a large oven-safe skillet over medium heat. Add diced onion and cook until translucent, about 3-4 minutes. Add minced garlic and cook for an additional 1 minute.
  4. Add asparagus pieces to the skillet and cook until tender-crisp, about 2-3 minutes.
  5. Pour the egg mixture over the asparagus and onions in the skillet. Stir gently to distribute the ingredients evenly.
  6. Sprinkle crumbled goat cheese over the top of the frittata mixture.
  7. Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the frittata is set and slightly golden on top.
  8. Once cooked, remove the frittata from the oven and sprinkle with fresh chives and lemon zest.
  9. Allow the frittata to cool slightly before slicing. Garnish with cherry tomatoes if desired.
  10. Serve warm alongside a fresh arugula salad, and enjoy a delicious brunch!
