- Preheat your oven to 375°F (190°C).
- In a mixing bowl, whisk together eggs, milk or cream, salt, and pepper until well combined. Set aside.
- Heat olive oil in a large oven-safe skillet over medium heat. Add diced onion and cook until translucent, about 3-4 minutes. Add minced garlic and cook for an additional 1 minute.
- Add asparagus pieces to the skillet and cook until tender-crisp, about 2-3 minutes.
- Pour the egg mixture over the asparagus and onions in the skillet. Stir gently to distribute the ingredients evenly.
- Sprinkle crumbled goat cheese over the top of the frittata mixture.
- Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the frittata is set and slightly golden on top.
