Agave-Mezcal Glaze
  1. In a small bowl, whisk together the agave syrup, mezcal, lime juice, chili powder, and a pinch of salt until well combined. Set aside
Grilled Watermelon
  1. Preheat your grill to medium-high heat.
  2. Brush both sides of the watermelon slices with olive oil and season lightly with salt and pepper.
  3. Place the watermelon slices on the grill and cook for about 1-2 minutes on each side, or until grill marks appear and the watermelon is slightly caramelized. Brush some of the glaze over the watermelon and flip once again and glaze. Cook them no longer than 30 seconds after you glaze them.
  4. Remove from the grill and let cool slightly.
Assemble Dish
  1. Arrange the grilled watermelon pieces on a serving platter.
  2. Drizzle remaining Agave-Mezcal Glaze over the grilled watermelon.
  3. Garnish with with lemon (lime) zest.
