Golden Aji Amarillo Mashed Potatoes

It’s no secret that Chef Jorge loves Peruvian cuisine, he also loves home cooked easy dishes (or as he would say “homey food”). This easy Mashed Potato recipe covers both bases and serves up a Homey-Peruvian side dish. Super easy prep and ready in 30 minutes (that’s quicker than take-out!). We love 30 minute dishes - don’t you?!

Golden Mashed Potatoes

This mashed potato recipe is a go to side dish that is easy to prepare and so good. The Peruvian aji amarillo chili provides a fragrant heat with floral notes and brightness that pairs perfectly with the starchy and buttery Yukon Gold potatoes.

  1. Place potatoes in a pot and cover with water, then add 2 pinches of salt and bring to a boil Return to a simmer and cook potatoes until fork tender (About 20min)
  2. In a small sauté pan on medium heat cook the garlic along with the oil, turmeric and a piece of butter for 1 minute until translucent.
  3. Add aji amarillo, salt and continue cooking for 1 minute .
  4. Add heavy cream and bring to a boil, then simmer and cook till the mixture is reduced by half. It should take about 5 minutes. Don't forget to give it a stir and set it aside once done.
  5. Strain the potatoes with a colander and return to the pot.
  6. Place the pot on the stove on low heat for 2 minutes to steam out any excess water. Stir the potatoes with a wooden spoon
  7. Mash the potatoes with a masher right there in the pot or whip them with a whisk for a fluffier consistency. Mix in the butter a few pieces at a time.
  8. Once the butter is mixed well, fold in the aji Amarillo cream
  9. Season with salt and serve hot.
