Boiled Yuca
- Rinse Yuca in cold water and place in a pot and cover with water.
- Bring to a boil and strain the water out. Add more water to cover the yuca and bring to a boil. Add a few pinches of salt. Simmer for 20-30 minutes until the yuca is soft and fluffy.
- Remove yuca from the water and place on a serving platter or bowl. Pour mojo on top.
Onion Mojo
- In a pot, heat oil with a bay leaf on medium heat until the leaf starts to fry. Add onions and a few pinches of salt. Cook for 2 minutes until translucent.
- Add garlic and continue cooking for 1 minute. Remove ½ cup of the starchy water from the yuca and add it to the mojo along with the lime juice.
- Cook the mojo for another 2 minutes on low and adjust seasoning with salt.
