Cocadas are a yummy Coconut Sugar Treat from Panama, traditionally served with coffee for dessert or on their own as a snack. This recipe will bring you back to your Latin roots and remind you of all the reasons we love sweet treats!

- Prep a tray with parchment paper and grease with oil.
- Place water and Panela in a wide pot, cook on medium-low heat until the panela is fully melted like a caramel consistency.
- Add the coconut and stir well, continue cooking for 5 minutes while stirring on medium heat.
- Add lemon juice, salt, and milk while mixing well.
- Turn heat to high and cook while constantly stirring until the mixture turns an amber brown (about 7-10 minutes).
- Turn heat off and with 2 spoons begin scooping and shaping the cookies into 1-2 inch wide flat pieces. Leave room in between to ensure the cookies do not harden together.
- Allow to cool room temperature or refrigerate for an hour to harden quicker.
- Serve room temperature with coffee or on their own as a snack.
