Cocadas are a yummy Coconut Sugar Treat from Panama, traditionally served with coffee for dessert or on their own as a snack. This recipe will bring you back to your Latin roots and remind you of all the reasons we love sweet treats!

  1. Prep a tray with parchment paper and grease with oil.
  2. Place water and Panela in a wide pot, cook on medium-low heat until the panela is fully melted like a caramel consistency.
  3. Add the coconut and stir well, continue cooking for 5 minutes while stirring on medium heat.
  4. Add lemon juice, salt, and milk while mixing well.
  5. Turn heat to high and cook while constantly stirring until the mixture turns an amber brown (about 7-10 minutes).
  6. Turn heat off and with 2 spoons begin scooping and shaping the cookies into 1-2 inch wide flat pieces. Leave room in between to ensure the cookies do not harden together.
  7. Allow to cool room temperature or refrigerate for an hour to harden quicker.
  8. Serve room temperature with coffee or on their own as a snack.
