Vaca Frita
Vaca Frita is a staple of Cuban cuisine. This easy recipe has a tender and tasty dinner ready in under an hour. Vaca Frita is simple to prepare for a weeknight meal, there is very little prep work and the shredded beef quickly sautés in a pan with onions.

- Cut the flank steak into 4 even pieces and place in a pressure cooker along with ½ an onion cut into quarters, garlic cloves, bay leaves, salt and pepper and fill with water enough to cover the meat. Cook for 30 minutes. *If preparing in a pot: simmer on medium heat for 1 hour or until the meat is soft enough to pull.
- Remove meat from liquid and allow to cool. Shred meat and place in a bowl with minced garlic, cumin, ½ of the lime juice, salt, pepper and mix well. Set aside.
- Slice the remaining onion into thin strips/Julianne cut.
- In a large frying pan or flat skillet, heat up half of the olive to high heat and add onions. Toss in the hot oil and allow to cook untouched for 1 minute. Then push onions to the side of the pan.
- Add remaining olive oil and allow to heat up. Place the shredded meat into the pan and gently toss to fully coat with the oil. Place the onions on top of the meat and allow to cook untouched for 1-2 minutes until the meat is brown on one side.
- Toss the meat and onions together and allow to cook for another 2-3 minutes until the meat is brown all around and the onions are soft. Add remaining lime juice and adjust seasoning with salt and pepper.
- Plate it and garnish with onion slices, lime wedges and drizzle EVOO on top.
