Air Fryer Yuca Fries w/ Vegan Aji Amarillo Crema

Ingredients

Yuca Fries
Aji Amarillo Crema (Vegan)

Instructions

Yuca Fries
  1. Peel the yuca with a knife and cut into 1 inch thick by 3-inch-long sticks. You may cut around and remove the inner core.
  2. Place in a pot with water to cover along with bay leaf and some hefty pinches of salt. Bring to a boil and simmer on medium heat until the yuca is tender enough to snap in half.
  3. Carefully drain the yuca and allow to cool on a baking tray. You may refrigerate.
  4. Pour olive oil on the yuca and sprinkle plenty of salt. Gently toss till fully coated.
  5. Cook fries in batches at 400 degrees for 10-12 minutes until crispy.
  6. Serve hot and sprinkle additional sea salt on top and serve with dipping sauce.
Aji Amarillo Crema
  1. Place all ingredients in a blender or food processor and puree until smooth.
  2. Adjust seasoning with sea salt.
