Yuca Fries
- Peel the yuca with a knife and cut into 1 inch thick by 3-inch-long sticks. You may cut around and remove the inner core.
- Place in a pot with water to cover along with bay leaf and some hefty pinches of salt. Bring to a boil and simmer on medium heat until the yuca is tender enough to snap in half.
- Carefully drain the yuca and allow to cool on a baking tray. You may refrigerate.
- Pour olive oil on the yuca and sprinkle plenty of salt. Gently toss till fully coated.
- Cook fries in batches at 400 degrees for 10-12 minutes until crispy.
- Serve hot and sprinkle additional sea salt on top and serve with dipping sauce.
Aji Amarillo Crema
- Place all ingredients in a blender or food processor and puree until smooth.
- Adjust seasoning with sea salt.
